The Z is a clear winner at base ISO as, of course, it should be. The Oly (on a tripod) gives the Canon a good run for it's money.
The Pentax 645 is not a 135, it lacks the mobility and performance for shooting fast moving objects. And the lens selection is far less, with much higher costs, too.

But much better IQ. Even the much cheaper tripod mounted Oly looks competitive with the Canon.

New Pentax FF will have something like Olympus, only better. Becauz it will be Foveon-like image capture with same amount of pixels as senzor enablez, but better colour depth.
It will knock people's sockz off. Pentax wantz to up the image quality to be clozer to the 645Z.
Unfortunately, Canon, Nikon, and other companiez who DID NOT want to invest into SR inside body technology, can never match. Even today, Pentax is best choice for pure image quality.

The 645z has a small crop sensor, so that it is only 20% wider than a FF sensor. But the 645z lacks fast lenses, so it can't produce the bokeh, which FF setups can.
Due to the APSC autofocus system (tiny for medium format), the 645z is useless for any tracking purposes.
This reduces the 645z to a special purpose camera.

What weed are you smoking?
The bokeh of MF is surely superior to that of the FF, owing to the physically larger apertures for the same AoV. My practical experience supports this.
Must agree with you, my 645 gives wonderful bokeh, and if you load it with some portra, you have a nice people-shot camera;-)
Owing to the large format, the FA75mm is already a good portrait lens. :)

I was using film rangefinder medium format (Mamiya) and found that I got better results with my Pentax 35mm camera for portraits with the 85mm. Sold it. The rangefinder was only good for landscapes stopped way down on a tripod. 645 SLR is different suspect.
The 645Z sensor is 66% larger than 135.
I doubt many Z's will be used for action photography so the auto focus is not an issue.
